Kale, brussel sprout & berry salad

It’s another pajama day at our house. My little guy has a cough and my toddler girl is continuing to practice on the potty. We are dreaming of sunny days, playing puzzles and discussing how the garbage man is not scary.

I wrecked myself pretty bad over the holidays eating cinnamon rolls and delicious casseroles, but now I crave healthy greens!


This is my new favorite salad, that’s not only healthy but also incredibly tasty, too. Just shred brussel sprouts and kale in a food processor or chop by hand.


Next combine dried blueberries, diced red onion, edamame and your dressing.



Add the sliced almonds at the end and serve!

Kale, brussel sprout & berry salad

4 c. shredded kale

2 c. shredded brussel sprouts

1/2 c. dried blueberries

1 c. edamame

1/2 c. sliced almonds (added when ready to serve)

1/2 c. diced red onions

Salad Dressing

1/2 c. sunflower oil

zest and juice of 1 lemon

2 Tbsp. honey

salt & pepper
