I love my zoodler and wanted to share my two favorite recipes for an easy night of zoodles.
Zucchini noodles with marinara sauce and meatballs
Zoodle approximately 3 medium sized zucchini
Marinara Sauce
28 oz can crushed fire roasted tomatoes
1 tablespoon oregano
1 tablespoon thyme
few dashes of garlic powder
few dashes of onion powder
½ teaspoon red pepper flakes (add more for spicier)
1 ½ tablespoons sugar
1 teaspoon tomato paste
1/2 cup vegetable or chicken broth, salt and pepper to taste
1 tablespoon fennel
Turkey Meatballs
1 cup plain breadcrumbs
1/2 cup finely grated Parmesan
1/4 cup chopped fresh basil
1/4 cup chopped fresh Italian parsley
1/4 cup whole milk
1 tablespoon ketchup
1 tablespoon tomato paste
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
2 large eggs
2 cloves garlic, minced
1 small onion, finely chopped
2 pounds ground turkey meat
Extra-virgin olive oil
Cook meatballs in olive oil in large nonstick until browned on all sides.
Add can of tomatoes, tomato paste, sugar, broth and all spices, cook on medium for 10 minutes.
Sweet & Spicy Asian Zoodles
Zoodle 2 zucchinis
Zoodle 2 carrots (optional)
1/2 cup corn, fresh or frozen
Dressing
3 tablespoons creamy peanut butter
3 tablespoons unseasoned rice vinegar
1 tablespoon fresh lime juice, from one lime
3 tablespoons sesame oil
1 tablespoon soy sauce
3 tablespoons honey
2 large clove garlic, roughly chopped
1-inch square piece fresh ginger, peeled and roughly chopped
1 teaspoon salt
1 teaspoon sriracha
Prepare the dressing and mix/whisk vigorously. Mix all ingredients together and marinate zoodles. Sprinkle with fresh, chopped cilantro. Serve chilled.
